
For years I have heard members of my family talk with excitement about the annual Columbus Cup event that takes place at Bellewood CC, near Pottstown. Of course the day is filled with golf, bocce, Italian music and wine. But the highlight – judging by the rave reviews – always seems to be the food.
And atop the long list of "Old World" Italian specialties served that day is the mention of the "Featured Dish" that dominates the discussion. Each year a different recipe is re-created by the Bellewood culinary staff – carefully following the family recipe of someone selected by the Americans of Italian Heritage Council, the organization that runs the event.
