Ciambotta: a simple but tasty alternative to stews

Italian cuisine is known for how tasty it is, and, more often than not, meat, cheese or fish are part of the deal. This is probably why many fall victims to the common misconception that our food tradition does not offer many options for vegetarians and vegans. However, Italy’s culinary heritage is incredibly diverse, with a wealth of plant-based dishes that are not only flavorful but also really tasty. 

Ciambotta is definitely one of them: full of fresh vegetables, aromatic herbs, and high-quality olive oil, it is a dish that brings together simplicity, comfort, and bold Mediterranean flavors. A staple of Southern Italian kitchens, ciambotta is often compared to the French ratatouille or the Piedmontese ratatuia, as all three slowly stew fresh vegetables into a hearty, flavorful medley.
