The word "authentic" is used often by people describing a restaurant they like and used very often in the food press; badly misused I would say by inexperienced or uninformed writers. Whether or not it is used accurately, does authenticity really matter?
The question of authenticity, especially when it came to Italian food was always one of interest, and even, possibly of concern. Was it wrong, especially as a food writer, to enjoy food like Italian-American cooking that I eventually learned and experienced was different than the food in Italy?
