
Local chefs love to cook with truffles. The problem? Most are imported from Europe to New York, and then they make their way to Chicago. That means they're not as fresh as chefs would like. Giacomo Marinello is out to change that. As soon as he had his first bite of the delicacy in Chicago, he thought he could up the city's truffle game.
His new truffle-import business, Marinello Tartufi, imports the expensive
delicacies directly from one of the world's top spots for truffles, Umbria. Marinello, a 29-year-old Italian-born chef trained in London, is the son of a chef who died just as he was about to open a restaurant in Italy, when Marinello was 10.
