Gervasi Vineyard has named its distillery and boutique hotel, both of which are projected to be built by late 2018 to early 2019. The distillery will be called The Still House at Gervasi Vineyard, and the hotel will be The Casa at Gervasi Vineyard. The names keep in theme with its winery house, called The Crush House. (Crushing is an early and critical step in winemaking after the harvest and before fermentation.)
In addition to the distillery, the 10,000-square-foot Still House - which will be on the south end of Gervasi's 55-acre estate - will feature a cigar lounge and coffee house. The distillery will open with wine-barrel-aged bourbon, whiskey, vodka, gin and select liquors and brandy. Gervasi is seeking to hire a master distiller.
