Italian cuisine: Broad Beans Puree

This light, fluffy and flavorful puree is a typical Apulian peasant dish that can be served as an appetizing starter with bread croutons and pecorino cheese or as a main course accompained by boiled catalogna seasoned with olive oil and chili. This rustic puree is prepared with fresh broad beans, potatoes, olive oil, salt and pepper. It is enjoyed in the spring when fresh beans are in season.

Preparation is easy, but it takes sometime because of the cooking preparation. It is a very nutritious dish because the broad beans, like the other legumes, are rich in protein, fiber, carbohydrates, minerals (iron, potassium, magnesium, copper and selenium) and vitamins B and vitamin C. Therefore you should not serve it along with other rich food. The broad beans are native to Asia Minor and they were already appreciated by the Egyptians, Greeks and Romans. They widely grow in the Mediterranean area, particularly in Apulia, Sicily and Sardinia. They can be eaten either raw (excellent with pecorino cheese) or cooked.

INGREDIENTS
1350 g (3 pounds) fresh broad beans
2 medium potatoes, peeled and cut into 4 pieces
80 ml (1/3 cup) olive oil (extra virgin)
Salt and freshly ground pepper
Toasted homemade bread

DIRECTIONS
1. Shell and rinse the broad beans. Cook in a saucepan (preferably coccio) of simmering water for about 30 minutes. They should cook at the lowest simmer. Remove the cooking water with a ladle and replace it with cold water to cover the broad beans. Bring to a boil, reduce heat and cook covered for about 40 minutes


2. Meanwhile, in a saucepan cook the potatoes in plenty of water. Keep 1-2 tablespoons of cooking water


3. Drain the beans and remove the white skin


4. Put the broad beans, potatoes, one spoon of the cooking water in a food processor and whizz to a puree, gradually adding the olive oil in a stream. Taste and adjust the seasoning. Serve warm or at room temperature.

Note: You can substitute fresh broad beans with frozen broad beans (about 400 g), but the taste of fresh ones is undoubtedly better. - Paola
