Last year, salami proved to be the superstar of Italian cured meat exports. According to the findings of Assica (the Italian association of meat and cured meat industries), the positive trend in 2021 allowed this product to largely recover the drop in 2020, as well as to gain +31.4% in value compared to 2019 (before the pandemic).
Exports to EU countries, with 28,830 tons or 289.3 million euros, reached +15.8% in volumes and +10.9% in value. All major markets were up: Germany (+8.4% in volume and +3.7% in value, respectively), France (+11.6%, +8.9%), Belgium (+40.5%, +29.1%), Sweden (+12.7%, +11%), and Austria (+10.2%, +2.9%).
