Jo Medina (La Scuola Chef). What do you do for La Scuola? It's a team effort, so I work alongside my co-chef, Josh, to create new recipes, host classes in our cooking school, and host top-notch private events at Eataly. Every day, I explore the world of Italian cuisine and all of its traditions, develop recipes, test those recipes in order to perfect them, and then teach a room full of hungry guests how to make that recipe! We teach lots of hands-on classes like pasta and gnocchi, but we’re also always working on new class formats to keep things interesting.
