Italian food brings people together, even in quarantine. This week, La Cucina Italiana challenged readers and followers to prepare Mozzarella in Carrozza, the ultimate comfort food, and share it on Instagram. Originally from Campania, this cheesy delight is often enjoyed as an appetizer but makes for a satisfying meal. It can be prepared in many different ways, using a variety of breads and stuffings, and can be baked or fried.
La Cucina Italiana contributors Kristine Jannuzzi, also known as NYC Cheese Chick, and Paul Feinstein added their own twist. Kristine added some grated Parmigiano Reggiano to her fresh mozzarella, while Paul used his homemade sourdough bread, a balsamic glaze, and basil. Some sneaked anchovy filets or sundried tomatoes and eggplant into the cheesy filling, and others paired it with a pepper, capers and oregano dip, or a tomato soup.
