Galesburg’s newest restaurant Prairie Street Pasta opened for the first time Monday, although they had to cut their day shorter than expected due to weather conditions. Co-owners Renae and Daniel Earnhart say it may have been a blessing in disguise however. “Most of the time when you have a grand opening, you always get slammed,” Daniel said. 

With so many people checking out new restaurants, it can be difficult to put out quality food on time, and some people may have to be turned away. Monday, they had a good turnout, but not enough to put a strain on their resources.
