How it started: Chef Salvatore Olivella, a transplant from Naples, Italy, has consulted for such top New York pizza spots as Marta, L’asso, Numero 28 and the Serafina Group. He also co-owns a group of Italian restaurants in Dallas. So he was the obvious choice for Charles Castelli and Gino Ramundo when they were looking for guidance on a concept for their new pizza restaurant.
Castelli and Ramundo initially turned to Olivella as a consultant, but ultimately brought him aboard as a partner, executive chef and the inspiration of the new restaurant's name. The resulting collaboration makes the brand-new North Bergen spot chef Olivella’s first New Jersey project.
