The dream comes to fruition on Sunday. Twenty years ago, Pastosa Ravioli's founder, Anthony Ajello Sr., age 75 at the time, scouted out Eatontown as an "ideal location" for a new Italian food market. On Sunday, Pastosa Ravioli is having a "soft" opening at the Plaza 35 Village, on the northbound side of Route 35, near Monmouth Mall. A grand opening ceremony will be held on May 6 with live music and a ribbon cutting.
"Twenty years ago, we weren't ready. Here we are 20 years later, we found this location," said Anthony Ajello, the founder's grandson. "My grandfather was a visionary for locations. The fact that he said 'Eatontown' 20 years ago, the fact that we are now opening in Eatontown, it is big for our company. It is big for our family."
