Pasta cooking tips from the 70-year legacy of Lombardo's Restaurant in Lancaster

"Back in the day," says Michael Lombardo, "different days meant different jobs." Monday might be wash day; Tuesday was set aside for baking. In the Lombardo household, he says, that tradition extended to food as well. "Growing up, Sundays and Wednesdays" were pasta nights.

These days, he's around pasta every day, as co-owner with cousin/chef Paul Lombardo of the venerable Italian restaurant in Lancaster that bears the family name. It was 70 years ago, in 1946, that Dave, Joe and Jim Lombardo bought a small restaurant at 216 Harrisburg Ave. and turned it into a place where Lancastrians — at least, those without a nonna in their kitchens — could go for Italian cuisine.
