Family brings Italian street food to Franklin

Chea Carmack doesn’t care if customers want pizza. “That I don’t have and will never have,” Carmack said with folded arms. “It’s too American.” The same applies to staples like fettuccini alfredo and spaghetti and meatballs. “We’re not Fazoli’s,” she said, her eyes gleaming in the light of a new storefront home for the food truck she’s managed with her family since 2011.

The soft hum of a grab-and-go case filled with limoncello cake slices and tall cans of Sanpellegrino punctuates the silence between Carmack’s powerful voice, shaped by the laughter, jokes and passion she shares with her husband and business partner, Rob Carmack.
