When Jennifer Ashcraft left her job in the corporate world to become a restaurant owner, multiple locations was always part of the plan. When she decided to open the first Capriotti’s Sandwich Shop in Alabama at Clift Farm in Madison, she had already agreed to open three restaurants in five years. 

<p data-t="{"n":"blueLinks"}">The Clift Farm restaurant had the biggest opening in the history of the Las Vegas, Nevada-based chain when it opened in March. Ashcraft is now targeting a November opening for a second restaurant – this time near Huntsville Hospital.
