Saint Bibiana, Savannah’s newest restaurant, has only been open for a week, but that hasn’t stopped locals from visiting the restaurant more than once within that time span. Executive chef Derek Simcik has already witnessed guests who have earned the title of regulars after dining at the Italian restaurant multiple times for their fill of fresh pasta, locally sourced seafood and refreshing cocktails.
A love letter to classic coastal Italian cuisine, the restaurant is tucked inside the reimagined former Mansion on Forsyth, now known as the Hotel Bardo. From the acquisition of the building in August 2022 by Left Lane, a New York City-based hotel and real estate company, to the development of the culinary aspects, Simcik said the vision all came together perfectly.
