Vinnie's Neighborhood Italian restaurateur Eric Scheffer might have found the key to solving the staffing crisis, at least locally: open a restaurant where there's plenty of parking and an ongoing population boom.
That's also a pretty good recipe for attracting customers, and Scheffer expects sales at the newest Vinnie's, which will open at 1981 Hendersonville Road, to surpass that of his flagship North Asheville Vinnie's. Scheffer, also an owner of Jettie Rae's Oyster House, has his sights on mid-July for the South Asheville launch. He expects to be fully staffed.
