Sometimes long-distance relationships work quite well. For Rosalie, the restaurant in Houston’s new C. Baldwin Hotel, owner Brookfield Properties tapped Philadelphia design firm Rohe Creative, led by Kate Rohrer, to bring San Francisco–based chef Chris Cosentino’s Italian dining concept to life.

What resulted is a design Rohrer describes as “the marriage of Italian midcentury and Spaghetti Western influences, with a little nonna flair.” Indeed, the restaurant is named after Cosentino’s own great-grandmother, Rosalie. AD PRO caught up with Rohrer about the challenge of channeling the spirit of an Italian matriarch in a new Texas hotel.
