
While there are countless different styles of sausage throughout Italy, what many know as Italian sausage is most commonly a thick, encased pork sausage that's typically flavored with fennel and other spices and herbs.
It's a fresh sausage, as opposed to a smoked or cured sausage, which means the meat is raw and must be cooked before consumption. In Italy, this style is known as salsiccia.
