Production of certified buffalo mozzarella cheese from the southern Campania region will have to comply with stricter rules to meet growing demand from foreign and remote countries.
The decision was announced by the director of the protection consortium, Pier Maria Saccani. The new regulation of a business that has reached €500 million in sales includes the exclusive use of protected origin (DOP) buffalo milk in the factories that produce DOP mozzarella.
