While it's true that distillation is the art of concentrating aromas, scents and sensations from raw plant ingredients, cuisine is also an art of alchemy that combines raw materials to create new sensations and flavours.
The world of spirits is very large in terms of its variety, which is due to the fact that there are many, many ingredients that can be used as a base for distillation, from herbs to spices and berries, beans to potatoes, fruits to musts, up to grape marc. It is by distilling this last ingredient that you get one of the most beloved spirits, one which enjoys the distinction of being purely Made in Italy, grappa, a central part of Italian post-meal experience.
