The suffregna water comes from the underground springs of Mount Echia. Bottling it is impossible: it can only be collected using “Mummare,” the ancient amphorae. The future already seems defined: this spring will not just be an archaeological relic, but a living site, managed by citizens together with the city and local associations.
It appeared on the royal tables of Charles V, and has been — and still is — a symbol of the city’s identity. In the past, it could be drunk directly from kiosks scattered along the streets from Santa Lucia to the historic center. Suffregna water, which flows beneath Mount Echia, was classified under the 1866 laws as an economic and touristic resource.
