On a recent trip to Rome, I spent a lot of time wandering around the cobblestone streets between lively produce markets, searching for Italian delicacies. The weather in Rome at this time of year is akin to midspring for us, and that means artichokes are in season and absolutely everywhere. In fact, artichokes are so beloved by Romans, they are often considered by many as an official dish of the city.
People are often intimidated by preparing artichokes due to their many layers of leaves and the need to remove the prickly fibrous thistle at the very center. I'm here to tell you that the prep is nothing to be nervous about and is as easy as a few simple cuts.
