After the devastating earthquake on August 24, central Italy is experiencing a humanitarian disaster. In an effort to help, we are launching "Amatriciana per Amatrice," a national fundraiser to provide relief to the victims. Every Eataly across the USA will contribute to this cause through a simple Italian dish: pasta all'amatriciana.

Made with tomatoes, cured pork, and Pecorino Romano, amatriciana is a classic sauce named for Amatrice. This small picturesque town, nestled in the mountains, was at the epicenter of the earthquake. The day before, Amatrice was bustling to prepare for the annual amatriciana festival that celebrates its signature sauce; today, the historic town "is no more," according to Mayor Sergio Pirozzi. In the days since, aid organizations have deployed search-and-rescue teams, ambulances, mobile kitchens, and more.
