As the first summer heat arrives in Italy, the popularity of gelato shows no signs of slowing down, with countless new flavors making their debut. Sales are expected to grow by 4% compared to last season, when the sector nearly reached €3 billion in revenue—up 0.5 to 1% from 2023. Italy remains a nation of gelato lovers, ranking first in Europe with over 600 million servings sold in 2024, ahead of Germany and Spain.
Looking at the flavors of summer 2025, artisanal gelaterias are introducing some truly unique creations. Examples include a dark chocolate gelato enhanced with a Montepulciano d’Abruzzo reduction macerated with sour cherries, and a gourmet vanilla cream infused with lemon zest and nougat. Classic flavors are also being reimagined: an “inverted stracciatella” features a dark chocolate base with white chocolate shavings, while “Vento d’Oro” combines saffron, pistachio, and Sichuan pepper.
