A Colorado restaurateur who built her Italian restaurant chain from the ground up has given Loveland diners a new option. Pinocchios Incredible Italian, which Annie Vick launched in Longmont in 2003, opened its Loveland location on Valentine's Day, appropriately, in the former Johnny Carino's location, 1455 Rocky Mountain Ave.
"We have traditional Italian dishes, and we have some that are uniquely ours," Vick said. Two examples of the Pinocchios originals are the Archobellino Piatto, which is chicken with radiatori pasta and sun-dried tomatoes, onions, roasted red bell peppers and fresh basil in a warm balsamic sauce; and chicken and asparagus spaghetti in a broth-like sauce.
