Paul Fanizzi likes to meet challenges by planning ahead. On March 17, the day after Gov. Charlie Baker closed Massachusetts restaurants to everything but takeout for three weeks, Fanizzi’s Restaurant By the Sea had amped up its to-go business and hit the ground running.
“We always had a good takeout business so this just added on to it, which was a blessing,” Fanizzi says in a telephone interview from his Provincetown restaurant. “I got handheld computers so the managers can take credit cards outside and we stocked up on things like to-go condiments, containers, utensils. There are a lot more steps in takeout.”
