More than two years after it was first announced, chef Will Gilson’s multi-concept venue The Lexington will finally open its third and final puzzle piece: Geppetto is set to debut in early October, preceded by sister restaurants Café Beatrice and The Lexington.
The modern Italian restaurant will open with dinner service, focusing on handmade pastas crafted by chef Tony Susi (Capo, Olives, Sage). On the menu: Beet cavatelli with corned brisket, carrot spaghetti topped with chili bread crumbs, mushroom agnolotti with pumpkin purée, and hand-cut cocoa pappardelle with wild boar bolognese.
