Rome wasn’t built in a day and neither is the new Roman-style pizza at the new home of Pizzeria Marzano. The pizzeria Monday at 1315 East Main St., the former home of Back to Earth health market, and featured a new style of pizza that owner Jon Eucalitto, 33, has been working months to perfect.
The pizza dough is rolled out and proofed over a period of five days and the result is a thicker crust but a soft and airy interior. It’s just one of changes made by Eucalitto to the restaurant he started 10 years ago at the Big Lots shopping center.
