
David Pasternack, who gained a reputation at Esca for his affinity with sea creatures, has a new showcase for Italian seafood. He is introducing uncommon selections, like fusilli with Atlantic surf clams. "Surf clams are my new favorite," he said.
"They're sweet and briny and not at all tough. But nobody here is using them. They're mainly shipped to Japan." He's also serving porgy, both raw and cooked, and two kinds of mackerel. He is in partnership with LDV Hospitality, owned by John Meadow.
