For the past few years, two local entrepreneurs and longtime executive chefs were looking to open their own Italian eatery. That dream became a reality recently when Julio Cevallos and Luis Bautista saw that the location of the former Tonelli's Restaurant on Grassy Plain Street in Bethel was available.

Having worked for Rizzutos in Bethel for more than 15 years, helping the owners open both the Bethel and Westport locations, Cevallos said he wanted to stay in town. "There had been other opportunities, but I always liked the people of Bethel," Cevallos said, adding that his knowledge of the local market, its tastes and preferences also made Bethel the ideal choice for the new business. "We've been working on our recipes for the past few years perfecting the dishes that we wanted to serve."
