Food chat: Q&A with a passionate Italian

Corrado Palmieri is the owner of Palmieri Cafe, an Italian coffee shop and bakery, currently at the Dallas Farmers Market's shed on weekends. Soon, Cafe Palmieri will move into the Dallas Farmers Market's new venue, the Market. The move fulfills Palmieri's dream of offering an authentic Italian coffee and pastry experience in Dallas, seven days a week. I talked with Palmieri about his passion for authentic Italian pastry and coffee, and what to expect at Palmieri Cafe's new space.

You were born and raised in southern Italy. Do the baked goods at Palmieri Cafe reflect the baking tradition that you grew up with?

Absolutely. I'm from Galatina, south of Lecce, in Salento — it's in the heel of the boot. Galatina is where, in 1745, a pastry called pasticciotto was invented. I have memories of my grandma teaching me to bake it. My customers always ask, "What is that?" I can't describe it, so we make samples. People try it, and buy it right away.
