A San Francisco restaurant specializing in an old-school Italian flatbread is opening in Portland. Montesacro Pinseria Romana is planning to open its second location in the former Nicoletta + Beppe’s space, according to the NW Examiner. Pinsa, which falls into the focaccia and pizza family, is a Roman-style flatbread with a particularly airy crust, topped with things like guanciale and mozzarella.
It’s particularly hard to find in the United States; Montesacro’s San Francisco location claims to be the first pinseria in the country, making its dough with an imported blend of rice, soy, and wheat flour. According to the restaurant’s newly minted Portland website, Montesacro should open in Portland on December 18, serving a wide variety of pinsas and vegetable dishes. The topping combinations are particularly eye-catching, ranging from tuna belly to ‘nduja.
